This mouthwatering cheese is made from 100% sheep’s milk and the milk comes from the famed brebis sheep that graze in the valleys of Ossau and Iraty. Ossau Iraty is ivory in color with a natural dry thick rind that can range from an orangish yellow to a dark brownish gray.

Known as the grandfather of Basque cheeses, some say that Ossau Iraty was one of the first intentionally made cheeses in Europe, possibly dating back to 3,000 BC!

Ossau-Iraty is produced in two regions in the southwest of France along the Spanish border—in the Northern Basque Country’s Irati beech forest and in Bearn’s neighboring Ossau Valley. The two places lie in the green rolling foothills of the Western Pyrenees.
