Le Blackburn (Quebec)
This firm pressed farm cheese is made with thermalized milk. It has a brushed rind, and is surface-ripened for over nine months. Its unique fabrication technique makes it an exceptional gourmet cheese that everyone likes. Its interior is pale yellow and covered with small, irregular holes, and its texture is slightly crumbly. The complexity and intensity of its salty roasted hazelnut flavour gives your palate an incomparable experience..
The Blackburn Farm is situated in Jonquière, in the Saguenay-Lac-Saint-Jean region. The farm was established 80 years ago by the present cheese maker’s great-grandfather. In 2006, four generations later, the family turned to cheese making.
