This is a firm, crumbly blue that gets more potent as it ages. The tangy bite mellows on the tongue to a buttery blue finish. The cheese is made at Morningstar Farm on Vancouver Island with raw milk from their own herd. They were the first dairy farm in British Columbia to be certified by the SPCA.
